preparation time: 10 minutes

makes around 16 balls

equipment: food processor

4 handfuls of dry roasted almonds (you can use raw if you prefer)

1 ½ handfuls of coconut flakes (the larger chips are better as they are minimally processed)

1 handful raw hazelnuts

1 tbsp carob powder (optional)

2 tbsp hemp powder

3 heaped tbsp raw cacao powder

1 tsp vanilla essence (optional)

3 tbsp maple syrup

1 tbsp coconut oil

1-2 tbsp water (more can be added if needed)

salt to taste

1. blitz the nuts and coconut till they are finer but still slighty coarse

2. add the salt, cacao, hemp and carob and blitz again

3. add the liquid ingredients and blitz again

4. making sure the mixture is well combined take small portions and roll them into even sized balls.  Place onto a baking tray or plate.  Place in fridge or freezer till firm then transfer into a glass airtight container and keep in the fridge.

These are so morish, so easy and nutritious. They’re great for snacks, sweet treats, on the road, school lunches or for social gatherings.

hope you enjoy,

with love,

Miriam xx
